A very snowy snippet for the season

Allow me this personal indulgence. I enjoy almond icing on Christmas fruit cake, ginger loaf and of course carrot cake. As I sat looking out my main floor balcony doors I mentally transformed the gently falling snow into thick sheets of creamy almond frosting and immediately lessened the impact of having to shovel the stuff off my car, porch and drive way. Winter is a wonderful time of the year to imagine such tasty treats. – gc

  1. Love some fruit cake. Nobody else in the family eats it, so when I get my big 1 lb. cake from Texas each year, it’s all mine. Great post GC.

    • Thank you. I also like the Christmas fruit cake. Try to make it last at least the full twelve days of Christmas. The almond icing takes the cake in that one. πŸ™‚

  2. I’m not a fan of the almond layer, but do enjoy to the icing topping. Our Christmas cake was made weeks ago and will for the next three weeks continue to have alcohol dribbled over to keep it moist until it is eventually iced just before the big event!
    I think you’ve just kick- started the Christmas season very nicely with this one. πŸ™‚

  3. If I looked outside and saw almond frosting on carrot cake as far as the eye could see, I would be face-first in the stuff. Forget about shoveling it! Lovely image.

    • Not sure that your Christmas cakes are the same as ours. Over here it’s not known as almond frosting, the almond is a separate layer known as marzipan and that goes on top of and around the sides of the very rich fruit cake before the cake is iced. It’s the base for the royal icing (icing sugar mixed with egg white). This will then have tiny decorations of a Christmas nature around the top. I dislike the marzipan but happy to have a small nibble of the white stuff. We also serve Christmas cake with cheese, sweet and savoury on the same plate. Is this the same thing?

  4. Linda, you referred to an almond frosting on carrot cake. Over here the recipe would be similar to a cheese cake topping, cream cheese and icing sugar (powdered sugar) some might add double cream but never with almonds.

    Sorry Gerry, bet you didn’t expect so many assorted comments from me and all over a bit of snow! On the other hand maybe you did!
